My vegan cauliflower cheesy bake is something between a cauliflower cheese and a quiche (minus the pastry!). It’s filling, packed full of veggies and has a gorgeous creamy cheesy taste. What’s more it’s only 306 calories per portion. This makes it a great option when following a 1,200 calorie meal plan. If you use fortified nutritional yeast, it will also help towards your B12 intake too.

I quite like this as a lunch option but it works equally well for dinner. I eat it on its own but you could add extra vegetables, potatoes or salad on the side if required.

My cauliflower cheesy bake is also a great way to use up leftover vegetables. It also helps disguise them with lots of delicious flavour! My recipe uses swiss chard and chestnut mushrooms in addition to the cauliflower. However I’ve used peas, green beans and sundried tomatoes in the past which have all worked well.

The cayenne pepper adds a touch of spice but it’s quite mild. Feel free to add extra if you’re feeling more adventurous!

To make this dish you just roughly chop all of your vegetables and then whizz up the sauce to pour over. The cashews give it the creamy texture. It couldn’t be simpler, but magically transforms over 40 minutes into a meal that tastes a lot naughtier than it actually is.
