It’s been on my ‘to do’ list for some time to come up with a healthy breakfast smoothie suitable for those of us who don’t eat banana. Last weekend I finally got a chance to experiment and after a few ‘good but not quite right’ attempts I struck gold! My latest creation is a peanut butter smoothie with a fruity twist!
Nut butter smoothies make a great protein rich breakfast choice and oats slowly release their energy to keep you full until lunch. Apple and peanut butter is a great combination but I’ve added cherries to my version to give it an extra fruity punch.

1 1/2 tablespoons nut butter (peanut / almond / cashew… the choice is yours!)
1 apples (use a sweeter variety like Braeburn or Pink Ladies)
A handful of frozen cherries
A handful of icecubes
2 tbsps oats
1/2 tsp vanilla essence
A squeeze of honey
1/4 tsp cinnamon (optional)
110ml almond milk (I like my smoothies thick, but add more if you like yours looser and more milky).
Blend all of the ingredients together, pour into a serving glass and squeeze over a swirl of extra honey if you’re sweet toothed like me!
